Today on The Health Feast, Po and I are joined by Tim Kauffman, a man who defied the odds. When faced with a debilitating genetic disorder, addiction, and obesity, Tim's future seemed hopelessly bleak. Yet, in the depths of his struggle, he made a decision that would change everything. He decided to take one small step—a step that would lead him on a journey from the brink of death to the heights of endurance and health.

Diagnosed with Ehlers-Danlos Syndrome in his 20s, Tim lived in chronic pain for years. By the age of 37, he weighed over 400 pounds and was addicted to fentanyl, alcohol, and fast food. But that all changed. Tim began his journey to health, making small, consistent changes that transformed his life. Today, he's thriving on a whole-food, plant-based diet, completely off medications, and has just completed his first Ironman competition—a grueling test of endurance that includes a 2.4-mile swim, a 112-mile bike ride, and a 26.2-mile marathon.

Tim has chronicled his transformation in his book ESCAPE: Breaking Free From A Self-Made Prison, where he shares how he not only broke free from the physical and emotional chains of addiction and obesity, but also found a life filled with purpose and gratitude.
